Olives, around northern Lake Garda, local olives also thrive in the mild, alpine climate! In their honor, they are celebrated and enjoyed every year in November!

The fact that olives can be harvested for olive oil productionin Europe's northernmost growing region, which can be experienced with all the senses today, is partly thanks to the Romans. They introduced the noble Casaliva variety here almost 2,000 years ago. To this day, this high-quality variety is cultivated on the characteristic sunny terraces of Alto Garda, surrounded by dry stone walls, mountains, forests and lakes.

Although Trentino accounts for just 0.1 percent of Italy's total olive production, it attracts a great deal of attention, even among international connoisseurs. Spectacularly situated on the slopes at the foot of Arco Castle, the historic "Olivaia di Arco" grove with 4,100 olive trees invites visitors to take part in guided hikes, visits and tastings.

Between October and November, the time is ripe not only for picking the still green olives by hand and comb. All the products, such as the exclusively cold-pressed oils, olive breads, dressings, spreads, teas and accessories made from olive wood, as well as cosmetics including valuable olive extracts, want to be enjoyed, tested and evaluated.

The best way to do this is to visit the traditional olive festival "Frantoi Aperti" every year in November at various locations in Garda Trentino: during the "open days", it is worth visiting the oil mills - you will be amazed at the different aromas and flavors of the oils on offer. The restaurants also accompany these culinary days with themed dishes, menus and delicacies.

Connoisseurs like to take their oil straight from the "Frantoi Aperti". You can also bake the local and extremely delicious Pan Di Molche bread at home with the typical Paste Molche. If you would like to try it, here is the recipe:

This requires the grainy, bitter paste Molche, which consists of olive peel, pulp and stone fragments, all of which are solid residues from the processing of olive oil. Molche, which is part of the farming tradition in Garda Trentino, is also delicious on bruschetta and with pasta.
